Chocolate Delights are by far the most favored of foods in the USA.

Of all the foods we have available to us, you have to admit that we are drawn to sweets.

.

Have you ever wondered why?

Consider the following:

During the caveman days, what was there to eat? Animals if you could catch them and the fruits that grew naturally.

.

After a daunting day of exercising the survival of the fittest, and perhaps not getting anything to eat exhausted man turned to what was available, fruits and berries.

.

After munching on all these natural growing delicacies he realized that he had more energy.

.

As days went by, he realized that if he ate these fruits and berries before going out to look for other sources of food (meat), he would have more energy.

.

He was right. These substances gave him more energy to endure the arduous times and physical prowess needed to accomplish his deeds.

Our tongue can detect four basic flavors – sourness, saltiness, bitter and sweet.

However, humans are drawn to sweets because we evolved eating fruit from trees.

And, those fruits were full of natural sugars.

Now comes upon the scene, the essence of Chocolate.

What a wondrous food! Even the smell makes our palate water.

Evolution has not taken away the urge to have sweets but has been carried forth.

Today we have the culinary artist who can transpose those decadent flavors into special, delightful desserts.

The Molten Chocolate Cake one of the favorite Chocolate Delights

.

One such recipe that was presented to us on our weekly Wine and Dine Show is the Molten Chocolate Cake.

.

This particular recipe for two, is healthy and tastes delicious and has been revised to accommodate people on the Paleo diet.

.

Molten Chocolate Cake Ingredients

  • 2 level tbsp coconut oil
  • ¼ cup maple syrup
  • ½ cup dark chocolate chips (dairy-free and soy-free)
  • 1 egg + 1 egg yolk
  • pinch salt
  • 4 tbsp almond flour
  • 2 tsp coconut flour
  • 2 tsp instant espresso (optional)

So, here’s how it goes:

.

First, preheat the oven to 400 degrees. Then grease two ramekins with melted coconut oil or olive oil. Grease them well. You must now put the chocolate chips and coconut oil into a microwave-safe bowl and microwave for one minute. Remove from the microwave and stir until the chocolate becomes a smooth liquid.

In a separate bowl whisk the egg and egg yolk with the maple syrup until it thickens. I use a hand-held mixer. Next, add the chocolate-coconut oil mixture and whisk some more. Add the salt, almond, and coconut flour, and the espresso (if using – I substitute 2 tsp cocoa for the coffee because Rick cannot stand the flavor of coffee!). Whisk together until everything is blended.

Pour the mixture into individual ramekins and place into the oven then bake for 13-15 minutes. (Mine was perfect at 14 minutes). Remove from oven when edges are puffed out and hardened and the middle still looks uncooked. Let the ramekins cool for 10 minutes. Slide a knife around the edge and upend the ramekins onto plates. (If, by chance, it has stuck to the bottom, don’t worry. Just put it back together and top it with some fresh berries. Serve while still warm! BON APPETIT!

Red wine especially is favored above others to accentuate the taste and aromas of chocolate.
