How To Make Mini Pizzas

Remember how to make mini pizzas when you were a kid? It was so much fun.

.

When we started to learn cooking, whether a girl or a boy, it was exciting. I remember going to my cousins house. He was a couple years older then me. After playing for a while, we would go inside his house and he would take out the frying pan, heat up some butter and crack a couple eggs. That was the greatest tasting thing for me as a small kid.

.

I like to create things and see fast results, even to this day.

How To Make Mini Pizzas When You Are a Teenager…

.

So I figured that I would attempt to learn how to make mini pizzas. One day when I was home alone, I got out some English Muffins (and split them), some tomato sauce, some pepperoni ( being Italian we always had pepperoni available), some graded cheese and Italian seasoning.

.

I systematically took a one half of the split muffin and put the sauce on it first. Then I put a couple slices of pepperoni on it, covered it with some more tomato sauce, sprinkled the Italian seasoning on it, and finally sprinkled Parmesan cheese over that. Those days (talking 55 years ago), there wasn’t a combination of cheeses in one product. We never thought about that either. That was the way it was done.

.

I heated the oven to 350° put the mini pizzas on a baking sheet and put it in the oven for about 15-20  minutes – give or take.
Just smelling them cooking in there made my mouth water.
MMM GOOD!

Took it out and OH BOY, what a great after school snack that I did my self. I was so proud.

.

Today we have another recipe that was presented to our viewing public on our Wednesday Night Wine and Dine live cooking event.

.

This updated recipe as shown below can be paired with any of our awesome Fine wines.

.

Ingredients

  • English Muffins
  • Bag of shredded mozzarella cheese
  • Can of grated Parmesan cheese

  • Toppings to consider adding:
  • Sausage, Hamburg, Pepperoni Slices, Black Olives, Mushrooms, Jalapenos…etc.  Really whatever your heart desires.

.

Directions

.

  1.  Preheat your oven to 375°F.
  2.  Place English muffin halves on a baking sheet and bake them in the oven until browned.  Remove from oven and add toppings.
  3.  For any ingredient that needs to be cooked beforehand:  ie: Sausage:   Cook in a pan over med high heat until browned all over.  Then drain.
  4.  Top each English muffin half with a spoonful of tomato sauce.
  5.  Sprinkle mozzarella cheese on top.
  6.  Add your desired ingredient on top.
  7.  Then Top with Parmesan cheese and oregano.
  8.  Bake for 10-15 mins or until cheese completely melts.

.

TIPS that will make this come out perfectly:

  • DO toast the English muffins by themselves 1st for about 10-15 mins. (till just slightly turning brown).
  • Add the dry Oregano to the top of your pies.
  • DON’T go cheap on the tomato sauce.
